In a workshop, kitchen etc ... these are certainly not the places for paper (not looking so much at phones, tablets etc ... at this stage)
If you absolutely must keep paper you will need to put it inside plastic sleeves, folders, display books etc ... and THEN if you want to store it there over night (or longer) it then needs to be placed in another storage container.
Hence this 'double packaging' does make it fairly costly in terms of space ~ even for a few sheets of paper or even 1 or 2 sheets!

And it's certainly not reasonable to expect workers to operate without information in the 21st Century!
It is definitely worthy then as a starting point to look at the Office 365 Online offerings ~ even simple solutions such as e-mailing out information, documents to Google Apps or Hosted Exchange etc ... as a central, co-ordination point for documents whilst continuing to share information and subsequently moving on to minimise the 'paper clutter' !!
